Charcutepalooza

Never heard of Charcutepalooza, you say? Or maybe you’ve heard of it on Twitter or read about it in the Washington Post but you still aren’t sure what the details are. Let’s get that all straight.

Charcutepalooza is a meat-cured extravaganza, an internet foodie meme gone out of control as everyone brines, salts, or smokes whatever they can get their hands on (vegans — do not apply).

Click on over to the endlessly creative Mrs. Wheelbarrow's site and get your cure on — haul out the pork or duck or beef, rub in the spices and find out what you do after that. Food52 is also involved and when that community decides to hone their cooking skills, watch out for the feasting that will inevitably occur.
